day two: be grateful #byuBEYOU

This showed up on instagram today:

This man. But seriously. I love who I am with him in my life. He is the kindest and most genuine person I know. He makes me better everyday because he believes in me and is teaching me to believe in myself. I'm grateful that I sat on that white froyo couch with you. #thosewereourbabyfaces #canyouevenrecognizehim#nobeardbutstillgreat #byuBEYOU

What else can I say.  Not much really.  I'm so glad I got to marry my best friend and that we get to work together to raise our family and each other.  Maybe its crazy that it took me 22 years to meet him, but hey we have the rest of forever so I basically it was just a blink.  He's seen me at my worst and that's okay.  He makes me feel capable and strong and inspired.  Just because he's not afraid to be and do what he wants. and what he believes.  and wants EVERYONE else to do and be whatever makes them happy.  I love that. I need that.  It's not always that you find someone who doesn't care what the world thinks--he cares what you think about yourself.  Don't we all need a little more of that in our world?  Anyway, ya'll can meet him and share him with me...but just a little bit.  I'm greedy when it comes to my bae.
As far as my joyful mommy moment goes:
I love that we got one of those mirrors for the car--so I can see what Ivy's doing even in her backfacing carseat.  I like to watch her faces and expressions and reactions to the world around her.  A beautiful new song came on the radio--not a dance or rap song that we usually listen to while rockin our mommy daughter grocery runs.  As the ballad played, Ivy got her usual inquisitive face on and then started singing along.  not words, of course, but just cute humming noises, building along with the music.  Then she started clapping.  The we sang and clapped (and safely drove) all the way home.  I love watching her find joy in little things.  And learning new skills. And being my daughter.

Day one: Be Purposeful #byuBEYOU

Grace challenged me to start this "Be You" challenge with her and I thought it would be a perfect time to get a jumpstart on my blogging...again.  haha.  I could go on about how bad I've been at blogging since...well..always, but instead of that, lets just jump right in.  this challenge is about overcoming perfectionism and finding self-worth in my own happiness after all, and listing the reasons I've failed at consistently blogging doesn't seem like the best place to start.

My goal for these next 10 days will be this: to find something thing each day that makes me truly happy, BUT it has to be something simple.  Too often I find myself saying "well, today I feel good about myself because I checked off 4 things from my to-do list" or whatever.  My days as a mom are often defined as good or bad based on how productive I am able to be, despite whatever I'm doing that day.  But for these next 10 days I will find success and happiness and satisfaction in my day with something small and joyful.  I will describe this "joyful moment" each day and hopefully start a habit of finding joy in motherhood and in the sometimes monotonous days I live.  I think this is an important skill for me to develop because it's definitely something that has been the biggest change in my pre-mom to post-mom life.  I'm a HUGE to-do list person, and I really struggle to feel happy with myself unless I get big things done each day, which really isn't always possible now.  To be honest, some days if I have the energy and time to take a shower, get dressed, and make dinner then that's a BIG thing.  I want to shift my focus to being okay and happy with little successes.  Also, to appreciate my time spent with Ivy--playing, teaching, learning, cleaning up, feeding, etc.  Those are now MY big things.  That is where I want to find my joy and success.  And I know it's there--it will just take me some time to figure out how to find it more easily.

Today's joyful mommy moment:
I found so much joy in watching Ivy eat this evening.  We took her to a WAMII dinner tonight and the only way we could keep her quiet during the speakers was to give her little bites of fruit the whole time.  She would get really excited as the fork-speared-fruit approached--she stood on her tippy toes in the high chair and leaned as far as she could to get the food even faster.  it was just darling.  As this was going on, I reflected on how this could potentially be a crazy stressful night.  In fact, even just a few months ago, it would have been.  I'm slooooooowly figuring out how to let Ivy be messy, how to roll with the punches, and how to not stress the little things. well, okay. like...reeeealllyyy slowly--its not every day that I feel like I have a grasp on it yet.  So, yay.  Joy that tonight wasn't stressful.  Joy that today I was okay with her being noisy in public.  Joy that Ivy ate her fruit bites with vigor and I could revel in her love of life and food and applause and watching people around her.  Joy that I get to watch her love things.  And that I get to love her.

dear raspberry: your life so far

christmas 2013:

andrew tells me that we have a doctors appointment in January....surprise!  we are finally getting out the IMPLANON so we can start making babies!!

January 10th, 2014:

IMPLANON out--i didn't pass out (barely), the bruising is basically non-existent, and the healing process is fast. halla!

January-beginning of February:

baby making.

February 14th:

Valentines day!

February 21st:

Happy 23rd Andrew!

end of February-March:

the flu. a cold. then...the flu again...? hmmmm.... looks like it's time to figure out why i'm so sick....

March 4th:

successful home pregnancy! aiiiiiieeeee!

I taped it to the bathroom mirror and wrote "guess who made a baby?" for andrew to find when he got home.  his only words were "shut up shut up shut up! for real???"

ps. i'm still sick. all the time.

March 7th:

the doctor gives me magic pills to relieve the nausea and i'm finally a human again!  Andrew's so happy to have his wife back and i'm happy that i am alive enough to get out of bed and...clean the house?

March 14th-22nd:

Spring Break!!!  after a loooong drive across Wyoming, the corner of Utah, Idaho, and Oregon, we finally reach the coast and spend a week with Mike and Sarah Hess (and baby Genelle).  despite the ever present morning sickness (the WORST joke of a name ever) i'm able to enjoy the time with our wonderful friends and dream about being your mommy.

March 28th:

our little raspberry is 8 weeks and 2 days old.  we get to see the heartbeat and take home a cute little picture to hang on our fridge :)

IMG_3782.JPG

March 28th: evening

grandma and grandpa (weird!) larson come to visit for their spring break and are greeted by your little bootie picture on our fridge.  mom cries, dad looks shocked, and julia and isaac were thrilled to be in on the secret (24 whole hours before their parents).

the next week is spent hanging out with the larsons and doing "whatever the baby wants" (eating pizza, going to a movie, playing games.... ;)

morning sickness gets worse and i start to throw up almost every day (the afternoons and evenings seem to be the worst).  i hate this part of being pregnant, but seeing your cute little raspberry bottom helps to remind me that it's gonna be worth it.

i can't wait to be able to say you're the size of a strawberry!

April 1st:

i consider telling people that we are growing a tiny human, but know that no one will believe us...plus i'm not a huge fan of april fool's day.  so instead i just have a normal day and think about you a lot.

April 3rd:

in just a few days you will be 10 weeks old!  i checked online and they say you're the size of a kumquat...or a prune.  i'll just say you've graduated to a small.ish strawberry.

but a super cute one.

dear bugle chip makers-
why do these fit so perfectly on baby fingers?
and why is it so hilarious?

it is simply enough to note that you are a genius.
thank you.

laundry day?
why, yes please.
let me just play in this fort while you dry, dear blanket.
i love you.

the end.

for sarah

alright kids.
you got me.
blogging…NOT my strong point.

or maybe i should say consistency is not my strong point…

either way, you can clearly see that its been a full 8 months since my last post, and nearly a year since my wedding to the freckled boy of my dreams (ooops. spoiler alert).  and YES, i do realize that i haven’t even gotten to the part of the story where said boy and i even went on our first date.

BUT

some stories are best told in parts. you know.  to add suspense and drama.  which seems fitting because i super like my drama.

anyway.

i’m back to blogging and to drive you crazy i’m NOT going to pick up the story where we left off.  right?? i know i know—it’s killing you.  but you’ll live.

so lets fast forward a bit in time from the sketchy dance convo…to last night.

yep.

the date is july 13th.  in my new kitchen in my new apartment in my new town in the old state of Wyoming.  dinner time.

and here it is folks: WELCOME to my very first ever, food blog post (Sarah, dear: i made this for YOU)!

*disclaimer number one*  i am NOT a photographer.  therefore the pictures you may see may not convey the accurate deliciousness of the reality that was dinner last night.  don’t judge. (and don’t tell my dad, he’d be SO embarrassed).

*disclaimer number two* i love love love to cook and bake and try new recipes, and i almost always tweak recipes around, add or subtract to suit my liking, and combine two similar recipes—taking the best of each.  however the whole “i’m a genius so i make up my own recipes from scratch cuz i’m THAT good”—that’s my freckled boy, NOT me.  If you’re lucky, he may make some guest appearances and sprinkle some of his genius on my blessed readers.  But since today you’ve just got me—the original recipe for todays treasure came from pipandebby.com.  check it out if you want (ps they’re deliciously accurate photos put mine to shame.  so seriously. check it out.  http://www.pipandebby.com/pip-ebby/2012/2/27/ham-cheese-pretzel-bites.html/

*disclaimer number three* because the original recipe isn't mine (and i conveniently gave you the website where you can find it) i will just be noting my changes here.  if that's confusing....call me.  we'll chat.

tweak number one: instead of adding the yeast to the flour mixture, i mixed it with the warm milk and sugar for about 10 minutes first.  i just like to make sure that i've got good yeast going and that i haven't accidentally killed it.  you can tell the yeast is growing when it gets slightly foamy looking--and by the smell. it's so...yeasty.

well hello cute lump of pre-pretzels

tweak number two: when i'm supposed to let a lump of dough "rise for suchandsuch number of hours in a warmish, draft-free room" i NEVER just let it sit on my counter.  i have lived in too many frigid apartments with too little (or too expensive) heating to trust that ANY amount of time just sitting will make the dough rise.  so i have some life hacks.  one is to just turn your oven on low and set the cloth-covered bowl on top of the oven.  however if you actually have a decent oven, turning on the oven WON'T make the room, or the stove-top, hotter.  which is usually a very safe, very good thing.  however that means that your dough still won't rise.  luckily (unluckily?) we just moved to an apartment that may or may not be an upgrade from our last rat-infested home and SURPRISE the oven doesn't leak heat into the house.  that's why i took to my second trick (which, to be honest, is more successful than the first trick on average, but sometimes i'm too lazy to feel like boiling water haha).  so here it is.

a. leave your oven OFF
b. boil some water in a pot or teapot
c. once the water is boiling, pour it into a 9*13 pan and place it on the lowest rack in your oven
d. place the covered, dough-filled bowl, in your oven on a rack above the steaming water
e. close the oven door and wait for the magic!

rolling out my non-rectagular rectangles...

i diced up some lunch meat and shredded cheddar cheese for my filling (instead of mozzerella like the original) and used about half a cup of meat and half a cup of cheese for each roll

here's where i began to deviate again from the original. sooooo tweak number three: i pinched off the ends of each roll, cut them in half and pinched them off again in the middles where i had severed each roll from it's other twin half.  this save A TON of mess, disaster, casualties, and heartbreak when you have to boil the little suckers

don't they look like little burritos?

this is what baking soda water looks like

here are my silly pretzel children disguised as boiling burritos
(make sure you flip them!)

then out of the pot, onto the cutting board, chopped into deliciously bite-sized yummies, then onto the silpat
(which, if you haven't ever heard of, is tweak number four: silpat. always, for everything you baking, anytime, for all reasons. makes clean up a dream, saves you from having to spray/rub extra butter or grease onto all the things you put into your oven.  thank you silpat gods.)

sometimes i sneak pictures of things baking in the oven
also sometimes i'm too impatient to wait until things are done, so i don't cook them quite long enough to brown nicely, but since they still taste delicious i eat them anyway

tweak number five: melting butter?  silly. dirties up a whole extra bowl and a pastry brush.  heck no, i'mma go totally country here and just peel back part of the wrapping and rub the stick of butter right on the top of the warm yummy pretzel bites.  what do you do with the strange looking butter afterwards?  wrap it back up and stick it in the fridge. no one has to know.

sprinkle of salt and we're ready to devour!

so. once again.  were i to make these again, i would leave them in the oven until they turned nice and brown on top so they looked prettier for presentation.  however, the only slightly toasted pretzels left nothing to desire, as we may or may not have eaten half the pan in like...thirty-three point zero seconds.

and since we're talking about next times, i'd LOVE to try a sweet version of this.  like a brown sugar, cinnamon filling, or maybe cream cheese with fruit pie filling.  or i could do some taco-like things (onions, peppers, queso).  the best thing about this recipe is that the world is your pretzel.  anything goes.
